Spooktacular Halloween Bakes | prettylittlewriter

Baking is something I love dearly, yet I never really get the opportunity to bake things for fun. I'm either super busy at work or I'm just too tired!
So when my favourite time of year comes around, and my work decided to have a Halloween charity fundraiser, I jumped at the chance to get my baking mitts on and create something I've never made before!

Both these recipes were simple ones I found via Google, and but with the cake I added a few ingredients to create a spooky and thrilling effect perfect for Halloween!

Ingredients
125g/4oz butter or margarine, softened
125g/4oz caster sugar
2 medium eggs
125g/4oz self raising flour
Additions;
Green, orange and black food colouring
1 Lime
1 Orange or Orange Extract
125g Cocoa Powder
Ganache;
125g Double Cream
200g Dark Chocolate

The above ingredients aside from the ganache is per sponge cake, as I made five and had one with cocoa powder, one with lime and one with orange.

Method
1. Heat the oven to 180C/350F/Gas 4.

2. Line your 18cm/7in cake tins with baking parchment

3. Cream the butter and the sugar together until pale. Use an electric hand mixer if you have one.

4. Beat in the eggs.

5. Sift over the flour and fold in using a large metal spoon.

6. The mixture should be of a dropping consistency; if it is not, add a little milk. This is where you add your extra ingredients, cocoa powder, lime zest, orange extract etc...until you are happy with how your mixture looks for each cake tin.

7. Divide the mixture between the cake tins and gently spread out with a spatula. Bake for 20-25 minutes until an inserted skewer comes out clean. Allow to stand for 5 minutes before turning on to a wire rack to cool.

I found the best method for me was just doing one mixture at a time to allow it to cook and to wash up after each one and reuse the equipment.

Whilst waiting for the cakes to cool, prepare the ganache. This is done by simply melting the 200g of dark chocolate over boiling water on the hob, then mixing with the double cream. I also added some black food colouring to give it more of a Halloween effect.

Then use a little of the ganache to wedge each sponge cake on top of one another so they won't slip.
Applying the ganache to the rest of the cake was a very messy process, I must admit, a lot was probably wasted when it ran down onto the work top. But I was very happy with the overall finish.

For the Brownies;
185g unsalted butter
  1. 185g best dark chocolate
  2. 85g plain flour
  3. 40g cocoa powder
  4. 3 large egg
  5. 275g golden caster sugar

Method
1.Put the butter into a medium bowl along with the dark chocolate and melt over a saucepan.

2. Whilst waiting for the chocolate to cool, put the flour and cocoa powder into a sieve over a bowl, then, in another bowl, mix the eggs and caster sugar together until creamy and pale. Also, line a baking tin with baking parchment ready for the mixture.

3. Pour the cooled chocolate mixture over the eggy mousse, then gently fold together using a figure of eight.

4. Hold the sieve over the bowl of eggy chocolate mixture and resift the cocoa and flour mixture, shaking the sieve from side to side, to cover the top evenly. Gently fold in this powder using the same figure of eight action as before.

5. Pour the mixture into the prepared tin, scraping every bit out of the bowl with the spatula. Gently ease the mixture into the corners of the tin and put in the oven for 25/30 minutes.

6. I used the extra ganache I had to wedge the Waitrose bought edible Halloween characters on top of the brownies, which I thought completed the spooky look.

What treats have you made this Halloween?

Baking | Pumpkin Rice Krispie Bites | prettylittlewriter

Baking in the Autumn months always seems so much more fun and exciting than any other time of the year, I think it's because you begin baking more homely and cosy puddings and cakes, such as Apple Pie, Pumpkin Pie and so on.

I found the recipe to these rice krispie bites on Pinterest, and I thought they were absolutely adorable! They are fun to create and so simple, it is a great activity to do with children.

The ingredients you will need are;
- Rice Krispies (6 cups)
- 5 1/2 cups of mini Marshmallows
- Butter (3tbsp)
- 1/2 tsp Vanilla Extract
- Red & Yellow Food Colouring (Or Orange Gel Colouring)
- Chocolate Icing (The actual recipe asked for mini tootsie rolls, however living in the UK they are hard to come by, so I cut up icing instead)
- Any decorations for the eyes, nose and mouth (I used Black Food Colouring which can also be used as icing)

The first thing to do is melt the butter in a pan and then add your vanilla extract.

Then add your marshmallows and mix until those have all melted into the butter.

Whilst waiting for your marshmallows to melt, you can chop up your chocolate icing into small rectangular pieces that you will roll in your hands and add as stems once the krispies are ready.

Then you add your food colouring until you arrive at your desired shade of orange, then add in your rice krispies and mix until fully coated. Take off the hob once fully coated and leave to cool for a few minutes.

This is where it tends to get a little messy! The recipe said to use your hands to create pumpkin shaped balls of the rice krispies, however they just kept sticking to my hands, so I used my spatula and a well rounded spoon to create the circular shape on a plate for each one. Then I added the stems made from chocolate icing.

These little treats look so cute! Once they have hardened and are no longer falling apart, they are ready to eat!

I also chose to add some black colouring to create pumpkin faces on just a few of them, they were quite cool but food colouring isn't quite as tasty as icing!

If you like the look of this recipe and create your own, I would love to see your results!
These would be a great addition to any Halloween party, especially for children!

DIY Halloween Baking | prettylittlewriter

Today I did a little baking in the form of Halloween Cupcakes!

Now, I am no expert at baking, especially the decorating part of it all, however I think they turned out quite well!

The ingredients you will need are as follows;
2 Medium Eggs
Cupcake mix (or you can make your own if you find a recipe)
2 tbsp Vegetable Oil
60ml Water
Icing Sugar (Cupcake mix often comes with butter icing)
Food Colouring (If you want to make the icing a little more fun!)
Halloween cake decorations

The first thing you must do is set the oven to 180C or Gas Mark 4 to allow it to preheat.
Then add your cupcake mix, water, oil and eggs into a bowl and whisk for 2/3 minutes (by hand or electric whisk) until a smooth and creamy texture.

Next you add your mixture into your cupcake holders trying to spread as evenly as possible.

As you can see, this part can get a little messy, and there would have been 12 altogether had I not had a little accident with one of the paper cups!

Pop these into the oven for around 15-16 minutes, if you have access to a knitting needle or something else thin and long to test the middle of your cakes, do so! Sometimes they can look done on the outside but not quite finished on the inside! You will know they are done as the needle will be clean when you pull it out.

Icing

To make the icing, either use the butter icing that comes with the cupcake mix (you will need 60g of butter to add to the mix) or if you prefer to use icing sugar like I did, add teaspoons of water to it in a bowl and mix until smooth.
This is where I ended up making a mess! When making the icing, I added a little too much water to it, which made it very runny when applying to the cakes. I eventually figured this out and thickened the icing by adding more of the icing sugar to it. I also added some green and orange food colouring to the icing to make it a little spookier!

Once your cupcakes are finished, it is time to decorate them!
You can add anything you would like to the top of your cupcakes, I chose to use Gelly body parts and sprinkles with some wooden Halloween sticks!

This little guy is my favourite!

Hope you enjoyed this post and are inspired to make your own!

Halloween Baking | prettylittlewriter

Halloween is slowly approaching and I wanted to share some awesome baking ideas I've found through Pinterest.

Halloween is my favourite holiday because I love to be scared! Watching scary movies and dressing up gives me a thrill.

I want to start the celebrations a little early by baking some cool cakes and cookies, so here are the ideas I have found that I am going to be trying out!

The sandwiches are adorable and I will definitely be doing that with mine from now on!

Once I've gathered all the ingredients I need to make them, I will be posting tutorials on them and showing you all what the final result is, so keep checking back in the next couple of weeks!
